My cousin gave me a bite of this raw fudge and…I was blown away by the taste!
Creamy and dark, I could not believe it was made from all these healthy ingredients!
If you love dark chocolate and want a health fudge alternative, make this recipe today (and be prepared to eat the entire pan yourself – yes, it’s seriously that good!)
- 2/3 c. raw cashews (will grow to 1 c. when fully soaked)
- 1 avocado
- 1 c. coconut oil
- 1/2 c. coco or carob powder
- 3/4 c. sweetener agave, maple or honey (I like maple best)
- 1 tsp. vanilla extract
- 1/4 tsp earth salt (sea salt, Himilayan salt, etc…)
- Chopped nuts (optional)
Soak cashews by adding water to cover cashews and leaving them at room temperature for 3-4 (or more) hours. They should grow to 1 c. when fully soaked.
Drain cashews. Combine cashews, avocado and coconut oil in blender and blend until smooth.
Add remaining ingredients and blend until smooth.
Spread mixture into an 8×8 or 9×9 pan. Place in fridge and let cool until firm (around 1 hour). Keep refrigerated to maintain texture.
